Whole 30: Week, The Last

If you started on Monday, March 6th, then this is your last week. This meal plan would take you through the end and beyond. Do re-introduction as you choose (ahem, wine wine). For the meatloaf: There are a ton of recipe options you can find online. I drape bacon on the top of mine and add a little almond or coconut flour to help hold it all together. And I use a homemade  ketchup  recipe if I can't find the  Tessemae's  brand at the store. Nothing really special to note on the other recipes that hasn't been in an earlier blog posting. Day Zero: Preparation

I'm taking a little break right now to rest my arm. From killer exercise? No. From grating 2 sweet potatoes for my morning casserole. This is the only part I don't like of that recipe. Grating damn sweet potato. But it tastes oh, so good. I did see something online that wouldn't require the grating. And I'm adding it to the plan for next week's breakfast. I'll share that probably next weekend. I also did all my grocery shopping and cooked the Hamburger Soup. Planning to freeze half of it and have the other half for dinner tomorrow. Happy prep day! Grocery Trip: Week One

I already have some of the items needed to cook for this week's meals. Three colors of bell pepper, carrot, bagged coleslaw (for egg roll in a bowl), and some staples like mayo and eggs. And I already made the buffalo chicken casserole bc I had everything on hand. When I make my grocery list, I take one sheet of paper and as a I go through the recipes I write the ingredients in the order of how I walk through the store. So, my top of the paper is for fruits and veggies, next is the meat and misc, then frozen foods (my kid likes waffles for breakfast), then the eggs (and, again, milk for the toddler). Here's the final product:

False Starts

We've been back-and-forth as to the start date for Round Two. March 1, a mid-week hustle right in. March 6, Monday, the way things should be. I've at least re-stocked everything in the past couple days. Fresh batch of clarified butter, coconut amigos, almond & coconut flour. I've got my menu planned for a Monday start. And I have plenty of time this weekend to prep my deeply dwindled freezer stash with some new recipes. Had a fulfilling breakfast and lunch. Ready for the same for dinner. Getting myself back into that groove. And it feels good. So I think we are going to stick with Monday. Yes, glad I thought that out. :)

Let's Try This Again

So start date has changed - guests coming into town on original Day 4 (AKA Kill All The Things).  I'm starting up on March 6th. I like starting things on Monday anyways. :) New meal plan below. Followed by links and recipes. ** Hamburger Soup **  Aidell's Sausage **  Egg Roll in a Bowl  - I use ground pork, not beef. And I just grab a bag of "coleslaw" to make it easier. The bag is just carrot and cabbage all shredded. Next time I'm going to use two bags because I like the texture of it over the meat. And we add cauliflower rice. **   Buffalo Chicken Casserole **   Dump Ranch ** Salmon (I like to add Harissa sauce once it's cooked for some spice and extra flavor): ** Sweet Potato Casserole  - I top mine with a little Frank's Red Hot if I'm feeling spicy. **  Frittata  - There are tons of frittatas online, but I've had this and liked it. ** Wedge Salad

Seriously. This is getting real. Day Twelve is coming to a close and I can't wait to just go to bed. I had to keep myself busy this afternoon with cooking. I wanted wine. Like I really wanted some wine. So I made BBQ sauce instead. I'm just thinking of crawling into bed and reading my book. The energy needs to hit me. Soon.

Day Two.

I started off the morning feeling pretty good. No carb flu feeling, yet. Made this breakfast casserole yesterday so I can enjoy easy breakfasts with limited amount of clean up all week. Naturally, Sunil know wants to have it too (since he realized how good it is with a little Frank's Red Hot drizzled on top).  Without my usual Diet Dr. Pepper to use as a mid-morning stimulant, I'm happy to say I have found the joy - warm-in-your-hands joy - of Teavana Jade Mint Citrus Green Tea. And they even sell it at Starbucks! Yep, this single tea has turned me into one of 'those people' sitting with my work computer at Starbucks.  Flash forward to tonight. I was still feeling pretty good. No headache, no grogginess. Energy was there. So I decided to take on a recipe I'd planned for later in the week and swap it with one of the pre-made ones from yesterday. I figure there's a good chance the carb flu is coming. Day One.

131.6 lbs (back in June I had gotten myself down to 122, so this was sobering to realize). Spent my entire day off grocery shopping, batch cooking, and cleaning. There is still so much cleaning left to do, but it'll have to wait. The most enjoyable thing today was walking around the grocery store, alone, with my green tea warm in my hand. For over an hour. The next most enjoyable thing is seeing how clean my kitchen looks. And that fridge full of only compliant things. On repeat in my brain: It's only 30 days. I can do this. It's only 30 days...
