Just found this Chicken Tikka Masala recipe and can't wait to try it out over cauliflower rice. The hubs is excited too!

Day Zero: Preparation

I'm taking a little break right now to rest my arm. From killer exercise? No. From grating 2 sweet potatoes for my morning casserole. This is the only part I don't like of that recipe. Grating damn sweet potato. But it tastes oh, so good. I did see something online that wouldn't require the grating. And I'm adding it to the plan for next week's breakfast. I'll share that probably next weekend. I also did all my grocery shopping and cooked the Hamburger Soup. Planning to freeze half of it and have the other half for dinner tomorrow. Happy prep day! First Things First

So I started up a blog. Let's be honest. I started up a *new* blog - because that old one was just a hot mess. And I've spent an unacceptable amount of my day trying to decide what to write as my first post on this new, squeaky clean one. I guess it makes most sense to just talk about me. I'm Betsy. I'm a wife. I'm a mother. I'm a dog owner/lover. My family and I just moved from the suburbs of Las Colinas - yeah, I know it's Irving, but Las Colinas sounds fancier and is technically still accurate - to Argyle. The country. The kind of country where you really plan your weekly grocery store run because once you get home there is no way in hell you're going back for wine, not to mention "screw the paprika I'll make do without it". Day 4

Let's talk about the past two days.  Day 2. Ugh. Nap. Ugh. Day 3. Don't piss me off and we will be ok. Nap. Hi. This is great! Now to today. Day 4. After going to bed (hubs too) by 10, reading some of my book (All The Light We Cannot See), and doing one last baby cam check, I slept beautifully. So beautifully that I'm sure I was a smoosh-faced, drooling sleep monster most of the night. This morning is supposed to be "Kill All the Things", but I feel surprisingly ready to take on anything. I'm looking forward to cleaning up the rest of the house and doing some projects that have seriously needed doing for weeks now.  I even did my phone call "to-do" first thing this morning. That NEVER happens. I hate doing phone call things.  Breakfast with Norey was some fruit with the leftover overnight casserole. Mine had a little added Frank's Red Hot.
