Round Two. Week One: Prep Time

Week One Plan:

*Sweet Potato Casserole:

* Meatloaf (pulled from Whole30Recipes IG acct): 

 - 1 lb. ground beef (you can use turkey if you want, I often do)
 - 4-5 pieces of bacon (check your labels!) cut in halves
 - 2 eggs, whisked
 - ½ cup coconut milk
 - ½ t salt
 - ¼ t garlic powder
 - ¼ t tumeric
 - ¼ t of pepper

 - I add a sprinkling of almond or coconut flour, add more if the consistency is too runny

1.) Preheat oven to 350 degrees. Make your ketchup (I’ll include that below in comments!) if you’re going the homemade route and then set aside.

2.) Combine eggs, and coconut milk in a bowl and let sit for a few minutes. Stir together and add in meat, parsley, and seasonings. Wash your hands and get them in there to mix it up nice and evenly and form into a loaf on a baking pan – I use the kind that lets fat drain into the bottom portion. Take your half strips of bacon and cover the meatloaf with them in strips (I make my loaf extend horizontally, then lay the bacon strips vertically so they make nice cut marks for the meatloaf, if that makes sense). Spread about half of your ketchup on top, and bake for 50-60 minutes.

*Wedge Salad:




*BBQ Sauce:
 - 1 Granny Smith Apple, peeled & cored
 - 1/4 cup dates, pitted
 - 1/2 teaspoon ground cinnamon
 - 1/2 small onion
 - 1/4 cup apple cider vinegar
 - 8 oz can tomato sauce
 - 1/4 teaspoon cumin
 - 1 teaspoon smoked paprika
 - 1 Tablespoon coconut amigos
 - 1 Tablespoon garlic

1.) combine all ingredients in blender and mix until smooth.
2.) in a saucepan, bring the BBQ sauce to a roiling boil, then reduce to simmer
3.) Simmer about 20 minutes, stir occassionally
4.) Remove from heat and let cool.



****House Seasoning. Make this. Trust me. You'll use it all month and be grateful you have it. We use it when we bake potato wedges in the oven and sprinkle it on just about everything else too.
